National Hugging Day, Fancy Rat & Mouse Day Did you know there was an American Fancy Rat & Mouse Association? Neither did I!! From what I've gathered, being a member makes you either a Mouse Fancier or Rat Person. Not only do they have embroidered polos for purchase, they offer Rat Hammocks in every color imaginable. I admire the people that can truly love rats. That takes some guts. Jessica Florence has taken some damn adorable pictures of some rats. OMG, seriously. And also, holy crap, cute mice! And here I was, thinking today would be all about hugging. "No one is going to possibly want to hear about fancy rats or mice, WTH?" I hope you were able to hug to your heart's content, but I ALSO hope you were able to see another side of rats and mice. . . fancy or otherwise. My mind is surely blown. XO

Penguin Awareness Day, International Fetish Day Even though International Fetish Day is meant to celebrate BDSM, I chose a more gentle approach to today's holidays. In honor of Penguin Awareness Day, I would like to share some of my favorite blacks and whites in recipes, art, style, photos and decor.

XO National Popcorn Day DIY Microwave Popcorn in a Brown Paper Bag - Squawkfox 2. Add a 1/2 cup scoop of bulk popcorn kernels to your brown paper bag. 3. Fold the bag over twice (STAPLES = SPARKS, stay away!) 4. Pop into microwave for 3 minutes on high. 5. Add toppings (ie. chili powder, hot sauce and salt; onion powder and garlic powder; parmesan cheese and salt; cinnamon, sugar and honey; butter and salt) Holy canoli, good idea!! The Winkler Family Popcorn Balls - Thanks, MOM! 3 batched of popped corn 1 small box of any flavor Regular Jell-O (Traditionally: Black Cherry and Lime) 3 cups mini marshmallows 6 Tbs butter Put Jell-O and butter in pot and melt/stir until Jell-O is dissolved. Add marshmallows and melt. DO NOT STIR marshmallows after melted as it will not be fluffy! Pour this mixture over popped corn in large bowl, stir to coat evenly. With buttered hands, make into balls and enjoy! This is usually in our Christmas Care Packages and after I got mine this year, I asked my mom to make me some with double the marshmallow and half the popcorn next year. . . XO National Hat Day, Religious Freedom Day, Asparagus Month Yummy recipes, inspirational quotes, and a shout out to my family! Sing for Your Supper Lemon Chicken & Asparagus - Ingredients: 1 tablespoon olive oil, plus more for the asparagus 2 boneless, skinless chicken breasts, cut into 1-inch pieces 1 yellow bell pepper, chopped or cut into thin strips 1 cup chicken broth 1 tablespoon flour salt and pepper juice of one large lemon 1 bunch fresh asparagus Directions: Preheat the oven to 350 degrees and line a baking sheet with foil. Lay the asparagus in a single layer on the baking sheet and drizzle with olive oil. Season with salt and pepper and bake for about 6-8 minutes, until just barely tender. Set aside. Meanwhile, heat the 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook, turning the pieces so they cook evenly, for about 5 minutes. Add in the peppers. Cook for an additional 5 minutes then using a slotted spoon, transfer the chicken and peppers to a plate and set aside. Reduce heat to medium-low and whisk the flour into the drippings left in the skillet. Slowly whisk in the chicken broth. Add salt, pepper and lemon juice. Whisk constantly until the sauce starts to thicken slightly. Add the chicken and peppers back in and cook for 5-7 minutes. Spoon the chicken, peppers and sauce over the asparagus and serve. Oh my gosh, yum!! "Do not dwell in the past, do not dream of the future, concentrate the mind on the present moment." ~ Buddha Cooking Ventures Fried Asparagus - Ingredients: 1 lb asparagus (thin stalks) 1 1/2 c dry seasoned breadcrumbs 1 c freshly grated parmesan cheese 1 1/2 tsp seasoned salt 4 eggs, beaten Oil for frying Directions: Wash and dry the asparagus. Snap or cut the fibrous root ends off and discard. Thin stalks work best for this recipe since thicker stalks are too fibrous. In a shallow dish, combine the seasoned breadcrumbs, parmesan cheese, and seasoned salt and mix well to combine. Set aside. In another shallow dish, beat the eggs and set aside. Place a rack in a sheet pan and set aside. Start preheating the oven to 200F. Dip a few stalk of the asparagus on the eggs and allow some of the egg to drip off. Coat in the breadcrumb mixture. Re-dip the asparagus in the egg and the breadcrumbs to add a thicker layer of coating. Place the breaded asparagus on a sheet pan (not the sheet pan that has the rack in it). Repeat this process with the remaining stalks of asparagus. Shallow fry the asparagus in 1/2" of oil (preferably peanut oil). Heat about 1" of oil in a medium skillet over medium heat until it is shimmering. When the oil is hot, fry the asparagus until golden brown, which should only take a minute or so. They cook fast! Transfer to the sheet pan equipped with a rack and place the pan in the oven to keep warm will you fry the remaining stalks of asparagus. But he also does not enjoy going outside when it's cold. What I do not enjoy about this is cleaning up his teeny messes when he just can't hold it any longer. We have been experimenting with various outfits to see if he will tolerate them long enough to do his business and come back into the house, but we haven't had much success. Odie is a naked dog, through and through.
When it comes time to walk down the aisle, we will have to decide between these two classy-pup options for Odie. The bow tie from Family Style is classic, but the DIY necktie (thanks to Dog Under My Desk) just feels a bit edgier. It's probably the skull and crossbones!

My own mom emailed me saying "How did Friday the 13th go for you? My first patient told me.. . . I was clueless, but for the rest of the day it was on my mind. Thanks dude." This Friday the Thirteenth is actually a lot nicer than it sounds. The first Friday the 13th of the year is Make Your Dreams Come True Day! (Apologies for the picture. It's actually a lot scarier than I intended. Hopefully, no bad dreams!!) Speaking of dreams, do you dream in color? I mean, really. . . Most people don't think about it, but try to focus the next time you're in the middle of a dream. Some people dream in color and some people don't. I do. Literally and figuratively! In honor of making your dreams come true, I have a smattering of colorful tasty treats, dreamy crafts and lofty goals.

Seriously. Yum. Penne with Artichokes - Cooking on the Side Ingredients: 1 small onion, finely sliced 1/4 cup extra virgin olive oil 5 artichoke hearts, finely sliced 1 tablespoon capers 1 1/4 cups canned diced tomatoes 1 lb. penne rigate 1 tablespoon chopped parsley 1/2 cup grated Parmesan cheese Directions:

- Smitten Kitchen Ingredients: 3 tablespoons olive oil 1 small onion, finely chopped 1 pound mushrooms, trimmed, cleaned and chopped into small bits (Deb used creminis) 1 teaspoon kosher salt, plus 1 tablespoon for pasta water 1 cup dry Marsala wine 1 pound pasta, Giada recommends thimble-shaped pasta, ditalini, but Deb used snail-shaped or chiocciole 1/2 pound frozen artichoke hearts, thawed 3/4 cup grated Parmesan 1/2 cup cream 1/2 cup chopped fresh flat-leaf parsley 1 teaspoon freshly ground black pepper Directions: Place the olive oil in a large, heavy skillet over medium-high heat. Add the onions and cook for one minute. Add the mushrooms and one teaspoon of the salt. Sauté, stirring occasionally, until all the moisture has evaporated and the mushrooms have cooked down, about 10 minutes (though it may take you much less time). Add the Marsala and continue cooking until almost all the wine has evaporated, about 5 minutes. Meanwhile, bring a large pot of water to a boil over high heat. Stir in remaining salt. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta and add it into the mushrooms, Marsala and onions Add the artichoke hearts, Parmesan and cream and cook until the artichokes are heated through, about 5 minutes. Stir in the parsley and pepper, then adjust seasonings to taste. Transfer to a serving bowl and serve. The writer of Smitten Kitchen, Deb, makes a note to say "though I enjoyed the subtle meatiness of the dish, I can see why others might want a little acid to brighten it up; if you find this to be the case, I think a tablespoon or so of lemon juice or a splash of balsamic added at the end might do the trick." Thanks, Deb! I cannot WAIT to try this one! One Ordinary Day Parmesan Pasta with Artichokes - Ingredients: 2 Tbsp. butter 2 cloves garlic, minced 1 c. heavy cream or half and half 3/4 tsp. kosher salt freshly ground black pepper, to taste 2 1/2 c. artichoke hearts (packed in water), drained, cut into halves or quarters 1 lb. dried pasta 1/2 c. shredded Parmesan cheese 2 Tbsp. fresh or dried chives or parsley Directions: Cook pasta according to package directions. While pasta is cooking, melt butter in a medium saucepan over low heat. Add garlic and cook for 30 seconds. Stir in the cream, salt, pepper, and artichoke hearts. Cook until heated through. Sprinkle Parmesan cheese and chives in the bottom of a large serving dish. Toss pasta with cream mixture and add to serving dish. Toss to combine. Sprinkle top with additional cheese, if desired.
