_National Hugging Day, Fancy Rat & Mouse Day
_Did you know there was an American Fancy Rat & Mouse Association? Neither did I!! From what I've gathered, being a member makes you either a Mouse Fancier or Rat Person. Not only do they have embroidered polos for purchase, they offer Rat Hammocks in every color imaginable.  I admire the people that can truly love rats. That takes some guts.
_Actually, you know what, I take it back! I take it back! Rats ARE cute!!

_I'm literally tearing up. My eyes are watering due to the cuteness. I take back the prior joking. These little dudes are seriously fancy and adorable.
_And here I was, thinking today would be all about hugging. "No one is going to possibly want to hear about fancy rats or mice, WTH?" I hope you were able to hug to your heart's content, but I ALSO hope you were able to see another side of rats and mice. . .  fancy or otherwise. My mind is surely blown.

_Penguin Awareness Day, International Fetish Day
_Even though International Fetish Day is meant to celebrate BDSM, I chose a more gentle approach to today's holidays. In honor of Penguin Awareness Day, I would like to share some of my favorite blacks and whites in recipes, art, style, photos and decor.



_Kristi at 30 Pounds of Apples shared this awesome DIY for Hot Chocolate Sticks. I'm afraid Justin would end up just eating the chocolate off the ends before I could actually make hot cocoa out of them, but, hey, they're cute!
_I am unintentionally celebrating a more accurate International Fetish Day. This week we had to take our little Odie to the vet hospital and found out he has a herniated disc. A lifetime of living in the penthouse suites (2nd floor and above) has left with confined to a small area, no running and no walks for the foreseeable future. I can tell you Odie is not a fan of bondage. We took him for a walk yesterday, wrapped in a blanket, but it just wasn't the same. Poor little dude.
_Maybe if our stairs looked like this it wouldn't have hurt his back so much? Probably not. . .
_I've added this to my list of things to put on my wall about 100 times. I swear, it's going to happen. Probably not until our next residence (November 2012 - ten months WooHoo!), but it's going to happen!
_My mom introduced me to this cake and I brought it (in cupcake form) to a Thanksgiving dinner. People were literally dying and going to heaven after taking one bite. It made for an interesting party, but at least they died happy!

No, but seriously, the Chocolate Guinness (cup)Cake(s) were a major hit and it only takes like a cup of Guinness so you get about 5 bottles leftover to enjoy!
_ModCloth has this beautiful dress called "When the Night Comes" . . . I want a fancy occasion to wear this dress to. Any weddings coming up??
_Here are some fun penguin facts thanks to penguinfacts.net.
- Penguins are birds (Justin seems to think this is like saying "Dogs are dogs." Not true.)
- They don't fly, they use their wings for swimming at a pace of about 15mph.
- Are you a member of the United States Libertarian Party? Better think about getting this unofficial symbol tattooed on your bicep. Or better yet, your tail-feather! I crack myself up!
- Penguin = "pen" meaning head and "gwyn" meaning white.
- Penguins are ancient species that appeared 40 million years ago in the Eocene Epoch!
- They usually move in huge groups called colonies or rookery.
- There are at least 18 difference species of penguins.
- There may be as many as 100 millions penguins in the world, but they can be endangered by oil spills, water pollution and over harvesting of fish, squid or krill.
- They mate for life. . .  how adorable!

_National Popcorn Day
_1. Get flat-bottomed brown paper lunch bag.
2. Add a 1/2 cup scoop of bulk popcorn kernels to your brown paper bag.
3. Fold the bag over twice (STAPLES = SPARKS, stay away!)
4. Pop into microwave for 3 minutes on high.
5. Add toppings (ie. chili powder, hot sauce and salt; onion powder and garlic powder; parmesan cheese and salt; cinnamon, sugar and honey; butter and salt)

Holy canoli, good idea!!
_Oh. My. Gosh.

Popcorn Cake - Cookies and Cups
_Prepare a large tube or bundt pan by spraying evenly with cooking spray. Pop 2 bags of buttered microwave popcorn as directed on the package and dump into a large bowl. Pick out the kernels that didn’t pop. Now mix in 2 cups of M&M’s and 1 1/2 cups broken pretzel sticks.. (Not crushed, just broken into smaller pieces) melt 1 stick (1/2 cup) of butter over low in a large saucepan. When melted add in a 16 oz bag of mini marshmallows (8 cups).  Stir until melted and smooth.  Remove from heat and pour over your popcorn mix. Stir until all the ingredients are combined and then press into the prepared pan. Cover with foil and let your cake set for at least an hour to cool. Loosen sides of your cake from the pan by running a butter knife around the edges. Flip your pan over onto your serving platter.

Last, but not least . . .

The Winkler Family Popcorn Balls - Thanks, MOM!
3 batched of popped corn
1 small box of any flavor Regular Jell-O (Traditionally: Black Cherry and Lime)
3 cups mini marshmallows
6 Tbs butter
Put Jell-O and butter in pot and melt/stir until Jell-O is dissolved. Add marshmallows and melt. DO NOT STIR marshmallows after melted as it will not be fluffy! Pour this mixture over popped corn in large bowl, stir to coat evenly. With buttered hands, make into balls and enjoy!

This is usually in our Christmas Care Packages and after I got mine this year, I asked my mom to make me some with double the marshmallow and half the popcorn next year. . . Keeping my fingers crossed!

_I have a confession to make. I love (adore/worship/respect/admire) Hostess with the Mostess. Sometimes her parties are so cute they physically hurt. Splendid ideas, tremendous inspiration and unbelievable creativity! For example, here I have gathered some of her schemes for a Winnie the Pooh party! Enjoy! And, yes, I did use my thesaurus today!

_National Hat Day, Religious Freedom Day, Asparagus Month

Yummy recipes, inspirational quotes, and a shout out to my family!

_Lemon Chicken & Asparagus - Sing for Your Supper

Ingredients:
1 tablespoon olive oil, plus more for the asparagus
2 boneless, skinless chicken breasts, cut into 1-inch pieces
1 yellow bell pepper, chopped or cut into thin strips
1 cup chicken broth
1 tablespoon flour
salt and pepper
juice of one large lemon
1 bunch fresh asparagus

Directions:
Preheat the oven to 350 degrees and line a baking sheet with foil. Lay the asparagus in a single layer on the baking sheet and drizzle with olive oil. Season with salt and pepper and bake for about 6-8 minutes, until just barely tender. Set aside.

Meanwhile, heat the 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook, turning the pieces so they cook evenly, for about 5 minutes. Add in the peppers. Cook for an additional 5 minutes then using a slotted spoon, transfer the chicken and peppers to a plate and set aside.
Reduce heat to medium-low and whisk the flour into the drippings left in the skillet. Slowly whisk in the chicken broth. Add salt, pepper and lemon juice. Whisk constantly until the sauce starts to thicken slightly. Add the chicken and peppers back in and cook for 5-7 minutes.

Spoon the chicken, peppers and sauce over the asparagus and serve. Oh my gosh, yum!!

_Fried Asparagus - Cooking Ventures

Ingredients:
1 lb asparagus (thin stalks)
1 1/2 c dry seasoned breadcrumbs
1 c freshly grated parmesan cheese
1 1/2 tsp seasoned salt
4 eggs, beaten
Oil for frying

Directions:
Wash and dry the asparagus. Snap or cut the fibrous root ends off and discard. Thin stalks work best for this recipe since thicker stalks are too fibrous.

In a shallow dish, combine the seasoned breadcrumbs, parmesan cheese, and seasoned salt and mix well to combine. Set aside. In another shallow dish, beat the eggs and set aside. Place a rack in a sheet pan and set aside. Start preheating the oven to 200F.

Dip a few stalk of the asparagus on the eggs and allow some of the egg to drip off. Coat in the breadcrumb mixture. Re-dip the asparagus in the egg and the breadcrumbs to add a thicker layer of coating. Place the breaded asparagus on a sheet pan (not the sheet pan that has the rack in it). Repeat this process with the remaining stalks of asparagus.

Shallow fry the asparagus in 1/2" of oil (preferably peanut oil). Heat about 1" of oil in a medium skillet over medium heat until it is shimmering. When the oil is hot, fry the asparagus until golden brown, which should only take a minute or so. They cook fast! Transfer to the sheet pan equipped with a rack and place the pan in the oven to keep warm will you fry the remaining stalks of asparagus.

_Dress up Your Pet Day, Organize Your Home Day, Miss America Pageant
_Our chihuahua does not enjoy dressing up. But he also does not enjoy going outside when it's cold. What I do not enjoy about this is cleaning up his teeny messes when he just can't hold it any longer. We have been experimenting with various outfits to see if he will tolerate them long enough to do his business and come back into the house, but we haven't had much success. Odie is a naked dog, through and through.
_Gryffindor! But really, this is the most successful one, except that it's too long for his little body and he pees on it. But he looks SO cute and he'll at least wear it around for a second or two!
_I made this polar fleece hoodie and almost peed MY pants when I put it on him. Too big, too bulky and he's left looking like a Sith lord, according to Justin.
_Odie in his (too-small) suede parka. I really wanted this to be The One, but his big, broad, manly shoulders got in the way.
_This is Hollywood. He doesn't like his luchador mask. I don't blame him. The things we do to our pets, eh?
_When it comes time to walk down the aisle, we will have to decide between these two classy-pup options for Odie. The bow tie from Family Style is classic, but the DIY necktie (thanks to Dog Under My Desk) just feels a bit edgier. It's probably the skull and crossbones!

_First Friday the 13th of 2012, Make Your Dreams Come True Day
_People always get a little freaked out when they hear that it's Friday the 13th. My own mom emailed me saying "How did Friday the 13th go for you? My first patient told me.. . . I was clueless, but for the rest of the day it was on my mind. Thanks dude." This Friday the Thirteenth is actually a lot nicer than it sounds. The first Friday the 13th of the year is Make Your Dreams Come True Day! (Apologies for the picture. It's actually a lot scarier than I intended. Hopefully, no bad dreams!!)

Speaking of dreams, do you dream in color? I mean, really. . . Most people don't think about it, but try to focus the next time you're in the middle of a dream. Some people dream in color and some people don't. I do. Literally and figuratively!

_Feast of Fabulous Wild Men Day, Artichoke Month
_There's nothing like celebrating an entire day devoted to drooling over gorgeous men by trying some deliciously droolworthy recipes featuring one of this month's star ingredients: Artichoke. Seriously. Yum.

_Penne with Artichokes - Cooking on the Side

Ingredients:
1 small onion, finely sliced
1/4 cup extra virgin olive oil
5 artichoke hearts, finely sliced
1 tablespoon capers
1 1/4 cups canned diced tomatoes
1 lb. penne rigate
1 tablespoon chopped parsley
1/2 cup grated Parmesan cheese


Directions:
  1. In a skillet over medium-high heat, sauté the sliced onion in the olive oil. Add the artichoke hearts. Cook to a pale gold color over high heat, then add the capers and tomatoes, seasoning to taste. Simmer 15-20 minutes over medium heat.
  2. Cook the penne rigate until al dente according to package directions in boiling, salted water. Drain and add to the artichoke sauce. Sprinkle with chopped parsley and grated Parmesan.

_Spinach Artichoke Dip
- Annie's Eats

Ingredients:
8 oz. cream cheese, softened
1/3 cup freshly grated Parmesan cheese, plus more for topping
1/3 cup sour cream
1/3 cup mayonnaise
10 oz. frozen chopped spinach, thawed and drained
1 cup coarsely chopped canned artichoke hearts
4 cloves roasted garlic*, smashed
1/4 tsp. salt
1/2 tsp. roasted red pepper flakes

Directions:
Preheat the oven to 400˚ F.  In a medium bowl, combine the cream cheese, Parmesan, sour cream, mayonnaise, spinach, artichokes, roasted garlic, salt and red pepper flakes.  Mix well with a rubber spatula until all ingredients are evenly blended.  Spread into a small baking dish (I used a gratin dish).  Sprinkle additional grated Parmesan over the top if desired.  Bake for 35-40 minutes or until the top is slightly browned.  Serve warm with baguette slices, pita chips, crackers, etc.

*To roast individual cloves of garlic, just throw the unpeeled cloves into a baking dish or pan and bake at 350˚ F for 25-30 minutes.  Let cool before squeezing the cloves from the peels.

_Mushroom Marsala Pasta with Artichokes
- Smitten Kitchen
Ingredients:
3 tablespoons olive oil
1 small onion, finely chopped
1 pound mushrooms, trimmed, cleaned and chopped into small bits (Deb used creminis)
1 teaspoon kosher salt, plus 1 tablespoon for pasta water
1 cup dry Marsala wine
1 pound pasta, Giada recommends thimble-shaped pasta, ditalini, but Deb used snail-shaped or chiocciole
1/2 pound frozen artichoke hearts, thawed
3/4 cup grated Parmesan
1/2 cup cream
1/2 cup chopped fresh flat-leaf parsley
1 teaspoon freshly ground black pepper

Directions:
Place the olive oil in a large, heavy skillet over medium-high heat. Add the onions and cook for one minute. Add the mushrooms and one teaspoon of the salt. Sauté, stirring occasionally, until all the moisture has evaporated and the mushrooms have cooked down, about 10 minutes (though it may take you much less time). Add the Marsala and continue cooking until almost all the wine has evaporated, about 5 minutes.

Meanwhile, bring a large pot of water to a boil over high heat. Stir in remaining salt. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta and add it into the mushrooms, Marsala and onions Add the artichoke hearts, Parmesan and cream and cook until the artichokes are heated through, about 5 minutes. Stir in the parsley and pepper, then adjust seasonings to taste. Transfer to a serving bowl and serve.

The writer of Smitten Kitchen, Deb, makes a note to say "though I enjoyed the subtle meatiness of the dish, I can see why others might want a little acid to brighten it up; if you find this to be the case, I think a tablespoon or so of lemon juice or a splash of balsamic added at the end might do the trick."

_Parmesan Pasta with Artichokes - One Ordinary Day
Ingredients:
2 Tbsp. butter
2 cloves garlic, minced
1 c. heavy cream or half and half
3/4 tsp. kosher salt
freshly ground black pepper, to taste
2 1/2 c. artichoke hearts (packed in water), drained, cut into halves or quarters
1 lb. dried pasta
1/2 c. shredded Parmesan cheese
2 Tbsp. fresh or dried chives or parsley

Directions:
Cook pasta according to package directions.  While pasta is cooking, melt butter in a medium saucepan over low heat.  Add garlic and cook for 30 seconds.  Stir in the cream, salt, pepper, and artichoke hearts.  Cook until heated through.

Sprinkle Parmesan cheese and chives in the bottom of a large serving dish.  Toss pasta with cream mixture and add to serving dish.  Toss to combine.  Sprinkle top with additional cheese, if desired.
